Digestive Ginger soda


Ingredients

  • 2-4 inches of chopped or grated fresh ginger

  • One pinch of ground cardamon and a smidge of clove

  • Two cups of water

  • 1/2 cup of golden sugar

  • Soda water to top up


  • Add ginger and two cups of water to a pan and bring to the boil. Reduce the heat to a simmer for 5 minutes.

  • Remove from the heat and leave to steep for 20 minutes before straining into a clean pot. Discard the ginger pieces.

  • In the same pan, add the sugar to another cup of water over a medium heat, stirring until disolved.

  • Combine both liquids into a clean vessel.

  • To make, pour 1/2 glass of the ginger cordial and top with soda water.
